Isn’t the weather here in England lovely? Well nah I hate the heat BUT I am loving all the sunshine – so here’s some sunshine for your plate! This is a tropical twist on lemon meringue pie; crisp pastry filled with mango curd and topped with chewy meringue. I put lime juice in the curd for that beautiful tang to contrast with the sweetness of the meringue. Chocolate Orange Tarts
Any chocolate fans out there? It’s funny because although I admit I like chocolate I didn’t expect to have so many chocolate recipes on my blog. So yes sticking to the pattern here’s another! =] I recently used this recipe for a demo (at EHWLC once again!) but it wasn’t the one I originally had in mind. The original tarts I made had a lemon pastry cream and raspberries on top (very tasty) but that’s a flavour combination I’ve used way too much in the past – and I also wanted to use chocolate pastry =] The one difficulty with chocolate pastry is that it’s harder to gauge when it’s cooked simply by eye, but I believe if you’ve mastered standard shortcrust then it’s be a piece of cake. Use the same timings as you would with shortcrust and feel for the same textures and there shouldn’t be a problem =] Click here for the recipe
Fig Bars
Anybody like figs? Well if you like figs and you like fig rolls then you’ll like these! The same components are there – biscuit and a figgy filling – just in a different way. What I love about this recipe is that all the ingredients could already be sitting in your cupboard and it doesn’t take very long to whip up a batch! I’ve spiced up the filling with some ground cinnamon and stem ginger, and I don’t see why you couldn’t substitute the dried figs for dried apricots or any other favourites! Click here for the recipe
Chocolate Bloghop: Chocolate & Cherry Tart
I love chocolate, not sure I’m a chocoholic but I sure do love it. So the #chocolatelove bloghop came along I was pretty happy. I first came up with this recipe a couple months ago and fell in love with it from the first bite. Crisp shortcrust pastry, sweet cherry compote and rich chocolate ganache. I’m not usually a fan of dark chocolate but paired with something sweet I think it works beautifully. Click here for the recipe
