Yes, these do taste as amazing as they look! (If I say so myself hehe.) Cheesecake brownies are such a dangerous invention, as if cheesecake AND brownies weren’t dangerous enough! The rich, creamy swirl contrasts with the dark, sweet brownie while the whole thing is brought alive with black cherries. These brownies will put a smile on anybody’s face  and what’s more, they’re really easy to make!

Who doesn’t like cheesecake! Cheesecake is indulgent on so many layers (pardon the pun) – the crunchy base, the creamy filling, the sweet/fruity/other topping – and this a perfect example. I’ve always been more of a fan of chilled cheesecake, as you can’t beat the smooth creaminess, but baked cheesecakes are winning over my heart. And here’s one to win over yours. The ever popular salted caramel adorning a vanilla filling and shortbread base – yum yum yum!

Oranges and lemons, Say the bells of St Clement’s! I can’t say it’s a nursery rhyme I remember but it’s a very good suggestion for a flavour combination. Oranges and lemons just work so well with the each other, the sharp-sweetness of the orange and the sweet-sharpness of the lemon (I hope you’re following me) complement each other. And did I mention I love cheesecake? Well here I am, in my elements, with food once again!

Although no baking is required in this recipe, I had to share it as this cheesecake is simply irresistible. Fresh strawberries and creamy white chocolate combine with cream cheese and shortbread biscuits to form this dessert that is great all year round – especially on a summer’s day! I made it for a gift to bring to our neighbour’s barbecue and it went down a treat – in fact there wasn’t enough!

The creamy filling contains no gelatine to set it (the chocolate does that) so vegetarians can happily dig in too. Honeyed Fig Cheesecake

So this is a recipe I came up with a while ago, that I’m proud to finally publish on my blog (sorry for the absence). It marries the beautiful flavours of figs, mascarpone and honey into one of my favourite desserts – cheesecake! The mascarpone adds a really rich creaminess to the filling, while the sweetness of the figs is with the reinforced with the honey and spiced with a bit of cinnamon. Dried figs work well here if you are unable to get hold of fresh figs. Click here for the recipe


White Chocolate & Ginger Cheesecake

When I first joined twitter (which was some time ago now) I ran a competition for a recipe using my favourite ingredient stem ginger. The prize was to have the recipe featured on my blog and lo and behold here it is! The winner was @softdumplings whose idea paired my ingredient with white chocolate in the form of a cheesecake. I had to make it twice before perfecting it as baked cheesecakes have a tendency to overcook when not surrounded by a water bath (do make sure to use hot water other the cheesecake will take longer to cook).
