Another savoury recipe from me, yes you are seeing right! This is a homely, warming and filling recipe that you can make for a snack, for a meal or to freeze as back-up food (I do this all the time!). Tenderstem broccoli is a member of vegetable royalty in my opinion, it looks good and knows it does. Chicken & Basil Calzoni

One of my mates works at the Hut (that’s Pizza Hut to those of you who aren’t regulars) meaning I always get the offer of free (or at least
discounted) pizzas. When the opportunity to try a calzone came around I didn’t jump at it – and that’s not because I’m some sort of pizza purist despising the capitalists’ take on Italian cuisine but rather I thought of calzoni as hot, soggy baps filled with tomato, cheese and (in my case) chicken. Then when I found out calzone meant trouser (the plural being calzoni if you really wanna be Italian), I wasn’t any further encouraged to give it go. However, to my surprise, they are quite delicious, being as versatile as pizza (by altering the filling) and even good when on the go. Please note in my recipe I’ve stipulated ‘cheese’ meaning whatever you have to hand, if it goes stringy when melted it’ll do the job! Click here for the recipe

Chicken Patties

I love patties. I remember as child I would go with my mum to the market at weekends. The market traders would cry out with enthusiasm, trying to sell us some bananas or grapes, but all I was after was a patty. Trapsing along the murky pavement and through the masses of people with bags of meat, fruit/veg and whatever other bargains made the West Indian bakery smell even nicer!

I have to say, the filling makes enough for 20 so I suggest freezing the rest or making it into one big pie! Likewise, if you don’t want to bake all 12 at once, simply pop the extras into the freezer (all in one layer) before glazing. When you want to eat them, glaze and bake from frozen, adding 5 minutes onto the cooking time. You can adapt the recipe to make vegetable patties by replacing the ground chicken with 300g finely chopped vegetables (I use potato, carrot and green beans). Click here for the recipe
