Wild blackcurrant conserve is the reason for this recipe. It’s an ingredient I’ve used before and upon using it again I knew just the cake! Loaf cakes speak of generosity and plenty in a homely way compared to, say, a layer cake and with a coat of frosting can be just as elegant. The conserve lends a vibrant pink hue without the need for food colouring – and did I mention the taste?

This is a flavour combination I encountered when I was eating at one of my favourite restaurants. I’ve always been a fan of elderflower but was slightly perturbed to see two slices of cucumber floating in the elderflower soda I had ordered. But my mind was soon blown. The refreshing flavour cucumber brings truly complements the subtle sweetness of elderflower and I was very keen to put these two flavours in my baking.  Due to the extra sugar content from the cordial, these cupcakes rise a bit more than the Birthday Cupcakes recipe so you may need to put a little less in the paper cases. Beetroot & Chocolate Cake

I was recently challenged to use beetroot in a sweet dish. I wasn’t entirely freaked out but did think it would make for an interesting flavour. Vegetables such as carrot and beetroot can work well in cakes as they have a natural sweetness to them and add tonnes of moisture. This recipe is based on one for carrot cake, with the addition of chocolate to enhance the flavour and let’s not forget the gems on top – chocolate candied beetroot! Not strictly candied (like lemon or orange peel) but cooked in a sugar syrup and tossed in cocoa powder to take this cake to another level. =] Click here for the recipe


Lemon & Raspberry Cupcakes

I’ve been baking a lot of cupcakes recently, trying my hand at as many different flavours as possible in order to stretch my creativity (and of course tantalise my tastebuds!). The inspiration for these came pretty easily on one of my regular visits to the supermarket. I spotted a bottle of pink lemonade on the shelf and quickly made my way to the fruit & veg section in search of raspberries (I already had the lemon curd!). The recipe isn’t much different to my Apple & Cinnamon Cupcakes or my Birthday Cupcakes as I’ve developed a base recipe that only needs a few tweaks to create something very impressive but with little effort.
