I was about to write that friands are one of my favourite kinds of cake, what with their moist, close texture and nutty flavour, and then I thought against this since I write that almost every recipe is one of my favourites. But then I came to my senses and realised that of course I’m going to write about so many recipes being my favourites otherwise I wouldn’t be posting them! Hazelnut Cake with Orange A

Nuts are such a beauty to bake with, they enhance cakes with extra moisture and, as in this case, add depth of flavour when toasted. I’ve paired toasted hazelnuts with orange zest for a lovely traybake which is easy to whip up. Once baked and cooled a bit all that’s missing is an accompaniment, vanilla ice cream as I’ve suggested below or a refreshing dollop of yoghurt – yum!

Chocolate, Hazelnut and Caramel Swiss Roll

The thing I love about swiss rolls is that they are pretty simple to make and the flavour combinations are endless. Following on from my Passion Fruit Swiss Roll here’s a much richer version for all the chocolate lovers out there. The hazelnuts not only add that nutty flavour that goes so well with chocolate but they also add a lovely crunch, giving the roll even more depth.
